Sparkling wine project from Dan and Jacqueline Persan looking to make a uniquely Californian expression.

Alcohol: 11.5%

Vintage: 2022

Farming/winemaking: organic farming, 2 day maceration, then fermentation happens till the right amount of sugar remains, bottled so remaining fermentation can happen in bottle and trap the bubbles.  Non-disgoged, no dosage. Classic ancestral in bottle pet-nat technique (Petillant natural which translates to naturally sparkling).
