Jeremy Quastana | Mimi Semi Carbonic '23
Jeremy farms a tiny 4 acres and produces about one 1,000 cases a year. A tiny drop in the ocean of wine. He studied under some greats, including one of the godfathers of modern natural wine--Marcel Lapierre. In four vintages, he has shown that he can make clean, highly drinkable wines with very little sulphur dioxide.

Tasting Notes: semi carbonic funk, bright fruit with enough earthiness to balance everything out. The funk mellows the longer its open and evolves in a lovely way.
