Farming/winemaking: Biodynamic, certified organic white clay soil. The bunches are pressed; alcoholic fermentation begins in vats at low temperature (15°C), which ends directly in bottles using the ancestral method. No added sulfur and no residual sugar. 

Tasting notes: This pet nat is dry, with no residual sugars. Very clean and fun
